White Truffles Are Here

There are hundreds of species of truffles, but the fruiting body of some are highly prized as a food. Many world renowned chefs call these truffles “the diamond of the kitchen”.

Like the French black truffles, Italian white truffles are very highly esteemed; selling for $2200 - $1000 per pound. White truffles are found most famously in the countryside around the city of Alba, where the flesh is pale cream or brown with white marbling. The black truffle is named after the Perigord region in France and grows exclusively with oak.

In the markets, black truffles sell for $127-$383 per pound, depending on the quantity and quality of the harvest. At Paradiso Ristorante, you can expect to pay $60 - $100 per serving of white truffle.
