Summer in Sorrento

Chef Angelo has returned to his hometown of Massa Lubrense for the summer. This agricultural town, just outside of Sorrento is well known for their production of lemons, olives, capers, and of course, wine.

The summer in Sorrento is slightly cooler than the summer in Palm Beach, but Chef Angelo still found occasion to celebrate the Solstice with a Sorrento style bar-b-que.

The coastal areas in the south of Italy have an impressive array of seafood options. Chef Angelo opted for traditional dishes for his summer celebration. A morning trip to the local pescheria is the best way to ensure that lunch will feature only the freshest ingredients.

Fresh shrimp, also called “gamberoni” are a light and flavorful starter dish. Chef Angelo first grills the shrimp, then marinates them in a mixture of olive oil, lemon juice, and herbs.

Calamari is also a very popular menu item during the summer months. It is very important that this squid is always fresh, and never frozen. Chef Angelo simply removes the tentacles, and places the tube on a very hot grill for about one minute on each side, taking care to not overcook. After, they are marinated in the olive oil mixture.

Calamari alla Griglia

No Italian meal is complete without a pasta course, so Chef Angelo complimented his seafood feast with Lobster Paccheri. After steaming the lobster for three minutes and then cleaning the meat from the shell, he added it to a saucepan with shallots, cognac, white wine, coarse salt and pepper, and seasoned with crushed red pepper. Chef Angelo made a tomato sauce with fresh tomatoes, garlic, and olive oil from his father’s garden.

After adding the lobster to the tomato sauce, he let it rest for thirty minutes to infuse the lobster into the sauce.


Finally he cooked the pasta and mixed in the lobster and tomato sauce, and presto, Paccheri con Astice!

Returning home to Italy always inspires Chef Angelo. He counts his good fortune of being born in this area, with all of the fresh ingredients and great restaurants of the Amalfi Coast, Capri, and Sorrento as the ultimate inspiration.
